Cattail Brown Ale On Tap!! PDF Print E-mail

Cattail Brown Ale is bright, carbonated, and on-tap now!! With roasty, caramel, and toasty aromas and flavors dominating and a pleasant, balancing hop bitterness, Cattail beer is perfect when an amber just won't cut it and a porter is just too roasty. Cattail is a great accompaniment for grilled meats and strong cheeses - BBQ ribs are fantastic when paired with Cattail Brown Ale. Dolla-Dolla Pils In The Fermenters PDF Print E-mail

Dolla-Dolla Pils brewed to the numbers and was a breeze. It’s now in the temp-controlled fermenters and should be bubbling away shortly. Will rack to bright tanks via closed loop after 6 weeks for another 2 weeks of conditioning and carbonation before tapping. It will be a difficult wait, but well worth it.

 

 
XSB Brew Session PDF Print E-mail

We just finished brewing our XSB (eXtra Special Bitter) and have discovered a vacant spot waiting to be filled by either a willing volunteer to carry spent grains to the compost or an 80-foot auger system, whichever comes cheaper!! We’re hopeful that our eventual move into a suitably outfitted building will negate the need for this position/equipment…

 

 
Eternal – Cody’s R.I.S PDF Print E-mail

We’ll be brewing Cody’s Memorial Russian Imperial Stout, “Eternal,” tomorrow, which will be an annual event that results in a a beer to be aged for many years and experienced in a vertical after the desired collection is amassed. We’ll certainly be saving plenty to ensure that we can taste a vertical every year while we brew this monster beer in honor of our Eternal Assistant Brewer, Cody.

Release of Pilot Brewery v1.3 PDF Print E-mail

We’ve completed version 1.3 of our pilot brewery – some adjustments were required to ensure a tighter fit for the copper manifold in the mash/lauter tun (MLT). We’ve run our third brew through (MHB IPA) and verified the pumping rate was resolved. However, the copper manifold in the MLT decided to separate from the force of stir with the new mash paddle. So, we experienced our first stuck mash/lauter which caused a MUCH lower mash temp than desired. So far, that doesn’t seem to have had a noticeable impact, but we’ll see if the final product ends up drier than expected.
